Beef Tacos with Fresh Salsa

Ingredients
- For the Beef
- lean beef mince 500g
- olive oil 1 tbsp
- onion, finely chopped 1 large
- garlic cloves, minced 2
- ground cumin 1 tsp
- smoked paprika 1 tsp
- chilli powder (adjust to taste) 1/2 tsp
- beef stock 100ml
- salt and black pepper to taste
- For the Salsa
- ripe tomatoes, finely diced 4
- red onion, finely diced 1/2
- red chilli, deseeded and finely chopped (optional) 1/4
- fresh coriander, chopped small bunch
- lime, juice of 1/2
- salt to taste
- To Serve
- taco shells (pre-made) 8-12
- grated cheese (optional) to serve
- sour cream (optional) to serve
- avocado (optional) to serve
Method
- Heat the olive oil in a large frying pan or wok over a medium-high heat. Add the chopped onion and cook for 5 minutes until softened.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Add the beef mince to the pan. Break it up with a spoon and cook until browned all over. Drain off any excess fat.
- Stir in the ground cumin, smoked paprika, and chilli powder. Cook for 1 minute until fragrant.
- Pour in the beef stock and season with salt and pepper. Simmer for 5-10 minutes, allowing the sauce to thicken slightly.
- While the beef is simmering, prepare the salsa. In a medium bowl, combine the diced tomatoes, red onion, chopped red chilli (if using), fresh coriander, and lime juice. Season with salt and stir well.
- Warm the taco shells according to package instructions.
- Spoon the seasoned beef mixture into the warm taco shells. Top with the fresh salsa and any optional toppings such as grated cheese, sour cream, or avocado.
