Method

  1. Preheat your grill or toaster. Slice the baguette or ciabatta loaf diagonally into 1-2cm thick slices.
  2. Toast the bread slices until golden brown and crisp on both sides. Set aside.
  3. Finely chop the ripe tomatoes. Mince the garlic cloves. Roughly chop the fresh basil leaves.
  4. In a medium bowl, combine the chopped tomatoes, minced garlic, chopped basil, 3 tablespoons of extra virgin olive oil, salt, and pepper. Mix well.
  5. Spoon the tomato mixture generously onto each toasted bread slice.
  6. If using, drizzle a little balsamic glaze over the top of each bruschetta. Serve immediately.
