Bruschetta with Tomato Basil

Ingredients
- Baguette or ciabatta loaf 1
- Ripe tomatoes 400g
- Garlic cloves 2
- Fresh basil leaves 15g
- Extra virgin olive oil 3 tbsp
- Salt pinch
- Black pepper pinch
- Balsamic glaze (optional) 1 tbsp
Method
- Preheat your grill or toaster. Slice the baguette or ciabatta loaf diagonally into 1-2cm thick slices.
- Toast the bread slices until golden brown and crisp on both sides. Set aside.
- Finely chop the ripe tomatoes. Mince the garlic cloves. Roughly chop the fresh basil leaves.
- In a medium bowl, combine the chopped tomatoes, minced garlic, chopped basil, 3 tablespoons of extra virgin olive oil, salt, and pepper. Mix well.
- Spoon the tomato mixture generously onto each toasted bread slice.
- If using, drizzle a little balsamic glaze over the top of each bruschetta. Serve immediately.
