Caprese Salad
A simple and classic Italian salad featuring fresh tomatoes, mozzarella, basil, and a drizzle of olive oil and balsamic glaze.

Ingredients
- Large ripe tomatoes 2
- Fresh mozzarella ball 1 x 125g
- Fresh basil leaves a generous handful
- Extra virgin olive oil 2 tbsp
- Balsamic glaze 1 tbsp
- Sea salt pinch
- Freshly ground black pepper to taste
Method
- Slice the ripe tomatoes into approximately 1cm thick rounds.
- Drain the mozzarella ball and slice it into similar sized rounds as the tomatoes.
- Arrange the tomato and mozzarella slices on a serving plate, alternating them and tucking fresh basil leaves between the slices.
- Drizzle generously with extra virgin olive oil and the balsamic glaze.
- Season with a pinch of sea salt and freshly ground black pepper just before serving.
