Method

  1. Slice the ripe tomatoes into approximately 1cm thick rounds.
  2. Drain the mozzarella ball and slice it into similar sized rounds as the tomatoes.
  3. Arrange the tomato and mozzarella slices on a serving plate, alternating them and tucking fresh basil leaves between the slices.
  4. Drizzle generously with extra virgin olive oil and the balsamic glaze.
  5. Season with a pinch of sea salt and freshly ground black pepper just before serving.
