Method

  1. Gently break the meringues into rough, bite-sized pieces into a large bowl. Leave some larger chunks for texture.
  2. Pour the double cream into a separate bowl. Whip using an electric mixer or whisk until soft peaks form. If you prefer a sweeter dessert, add the icing sugar and whip briefly until just combined.
  3. Prepare the fruit: wash and dry the mixed berries. Hull and quarter the strawberries.
  4. To assemble, start by layering some crushed meringue in the bottom of your serving bowl or individual glasses.
  5. Spoon a layer of whipped cream over the meringue, followed by a generous scattering of mixed berries and quartered strawberries.
  6. Repeat the layering process with meringue, cream, and berries until all ingredients are used. Aim to finish with a layer of berries.
  7. Garnish with fresh mint leaves, if desired.
  8. Serve immediately to enjoy the contrasting textures before the meringue softens too much.
