Ingredients
- Ready-made meringues 8-10 individual
- Double cream 300ml
- Icing sugar 1 tbsp (optional)
- Mixed berries (e.g. raspberries, blueberries) 300g
- Strawberries, hulled and quartered 100g
- Fresh mint leaves, for garnish (optional) a few
Method
- Gently break the meringues into rough, bite-sized pieces into a large bowl. Leave some larger chunks for texture.
- Pour the double cream into a separate bowl. Whip using an electric mixer or whisk until soft peaks form. If you prefer a sweeter dessert, add the icing sugar and whip briefly until just combined.
- Prepare the fruit: wash and dry the mixed berries. Hull and quarter the strawberries.
- To assemble, start by layering some crushed meringue in the bottom of your serving bowl or individual glasses.
- Spoon a layer of whipped cream over the meringue, followed by a generous scattering of mixed berries and quartered strawberries.
- Repeat the layering process with meringue, cream, and berries until all ingredients are used. Aim to finish with a layer of berries.
- Garnish with fresh mint leaves, if desired.
- Serve immediately to enjoy the contrasting textures before the meringue softens too much.
