Ingredients
- For the Berry Filling
- mixed berries (fresh or frozen) 500g
- granulated sugar 75g
- cornflour (cornstarch) 1 tbsp
- fresh mint leaves, finely chopped 2 tbsp
- lemon zest 1 tsp
- For the Cobbler Topping
- plain flour 225g
- baking powder 1.5 tsp
- cold unsalted butter, cubed 75g
- granulated sugar 50g
- fresh mint leaves, finely chopped 1 tbsp
- milk approx. 100ml
- milk, for brushing 1 tbsp
- granulated sugar, for sprinkling 1 tbsp
Method
- Preheat your oven to 200°C (180°C fan/Gas Mark 6).
- In a large bowl, combine the mixed berries, 75g granulated sugar, cornflour, 2 tbsp chopped mint, and lemon zest. Stir gently to coat the berries and pour into an ovenproof dish (approx. 20cm x 20cm).
- In a separate bowl, whisk together the plain flour and baking powder.
- Add the cold, cubed butter to the flour mixture. Rub the butter into the flour using your fingertips until the mixture resembles coarse breadcrumbs.
- Stir in the 50g granulated sugar and 1 tbsp chopped mint.
- Gradually add the milk, a little at a time, mixing with a knife until a soft, slightly sticky dough forms. Be careful not to overmix.
- Drop spoonfuls of the dough over the berry mixture, leaving small gaps for steam to escape. Brush the tops of the dough with milk and sprinkle with the remaining 1 tbsp sugar.
- Bake for 30-35 minutes, or until the topping is golden brown and the berry filling is bubbling.
