Method

  1. Preheat your oven to 200°C (180°C fan/Gas Mark 6).
  2. In a large bowl, combine the mixed berries, 75g granulated sugar, cornflour, 2 tbsp chopped mint, and lemon zest. Stir gently to coat the berries and pour into an ovenproof dish (approx. 20cm x 20cm).
  3. In a separate bowl, whisk together the plain flour and baking powder.
  4. Add the cold, cubed butter to the flour mixture. Rub the butter into the flour using your fingertips until the mixture resembles coarse breadcrumbs.
  5. Stir in the 50g granulated sugar and 1 tbsp chopped mint.
  6. Gradually add the milk, a little at a time, mixing with a knife until a soft, slightly sticky dough forms. Be careful not to overmix.
  7. Drop spoonfuls of the dough over the berry mixture, leaving small gaps for steam to escape. Brush the tops of the dough with milk and sprinkle with the remaining 1 tbsp sugar.
  8. Bake for 30-35 minutes, or until the topping is golden brown and the berry filling is bubbling.
