Ingredients
- For the Berry Filling
- Mixed berries (fresh or frozen) 500g
- Caster sugar 50g
- Cornflour 2 tbsp
- Lemon juice 1 tbsp
- For the Crumble Topping
- Plain flour 200g
- Cold unsalted butter, cubed 100g
- Caster sugar 75g
- Ground almonds 50g
- Orange zest 1 tsp
Method
- Preheat your oven to 190°C (170°C fan/Gas Mark 5).
- For the filling, place the mixed berries in a large bowl. Sprinkle over the 50g caster sugar, cornflour, and lemon juice. Toss gently to combine and set aside.
- To make the crumble topping, put the plain flour into a large bowl. Add the cold, cubed butter. Rub the butter into the flour using your fingertips until the mixture resembles coarse breadcrumbs.
- Stir in the 75g caster sugar, ground almonds, and orange zest. Mix well.
- Pour the berry filling into an ovenproof dish (approx. 20cm x 20cm).
- Evenly scatter the crumble topping over the berry mixture.
- Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbling.
- Let it stand for a few minutes before serving. Serve warm with custard, cream, or ice cream.
