Method

  1. Preheat your oven to 200°C (180°C fan/Gas Mark 6).
  2. In a large bowl, toss the chopped kale with 1 tbsp of olive oil, salt, and pepper until evenly coated.
  3. Spread the kale in a single layer on a large baking sheet.
  4. In a small bowl, whisk together the minced garlic, grated ginger, soy sauce, honey ( or maple syrup), and lemon juice to make the glaze.
  5. Pat the salmon fillets dry with kitchen paper and place them on top of the kale on the baking sheet.
  6. Brush the tops of the salmon fillets generously with the prepared glaze.
  7. Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the kale is tender and slightly crisp.
  8. Serve immediately with fresh lemon wedges on the side.
