Glazed Salmon with Kale

Ingredients
- Salmon fillets 2 x 150g
- Kale, tough stems removed, roughly chopped 1 x 250g bag
- Olive oil 2 tbsp
- Garlic, minced 2 cloves
- Fresh ginger, grated 1 tsp
- Soy sauce 2 tbsp
- Honey (or maple syrup) 1 tbsp
- Lemon, juiced 1/2
- Sea salt to taste
- Black pepper to taste
- Lemon wedges, for serving 1/2
Method
- Preheat your oven to 200°C (180°C fan/Gas Mark 6).
- In a large bowl, toss the chopped kale with 1 tbsp of olive oil, salt, and pepper until evenly coated.
- Spread the kale in a single layer on a large baking sheet.
- In a small bowl, whisk together the minced garlic, grated ginger, soy sauce, honey ( or maple syrup), and lemon juice to make the glaze.
- Pat the salmon fillets dry with kitchen paper and place them on top of the kale on the baking sheet.
- Brush the tops of the salmon fillets generously with the prepared glaze.
- Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the kale is tender and slightly crisp.
- Serve immediately with fresh lemon wedges on the side.
