Grilled Beef with New Potatoes and Greens

Ingredients
- Sirloin steaks 2 x 200g
- Olive oil 3 tbsp
- Salt to taste
- Freshly ground black pepper to taste
- New potatoes 500g
- Fresh rosemary sprigs 2
- Broccoli florets 200g
- Green beans, trimmed 150g
- Garlic clove, thinly sliced 1
- Lemon juice from ½ lemon
- Fresh parsley, chopped 2 tbsp
Method
- Preheat your grill or grill pan to a medium-high heat. Pat the sirloin steaks dry with kitchen paper.
- Place the new potatoes in a saucepan, cover with cold water, add a pinch of salt, bring to the boil and simmer for 10-15 minutes, or until tender. Add the rosemary sprigs for the last 5 minutes of cooking.
- While the potatoes cook, steam or boil the broccoli florets and trimmed green beans for 5-7 minutes until tender-crisp. Add the sliced garlic for the final minute of cooking. Drain the vegetables well.
- Toss the drained potatoes with 1 tbsp of olive oil, salt, and pepper. Keep warm.
- Rub the sirloin steaks with the remaining 2 tbsp of olive oil, then season generously with salt and pepper.
- Grill the steaks for 3-4 minutes per side for medium-rare, or adjust to your preference. Let them rest for 5 minutes before slicing.
- In a small bowl, whisk together the lemon juice and 1 tbsp olive oil. Season with salt and pepper.
- Toss the drained vegetables with the lemon dressing and scatter with chopped fresh parsley.
