Method

  1. Preheat your grill or a griddle pan to medium-high heat.
  2. Boil the new potatoes in lightly salted water for 15-20 minutes, or until tender. Drain and set aside.
  3. While potatoes boil, prepare the chicken. In a small bowl, mix 1 tbsp olive oil, half the lemon juice, minced garlic, salt, and pepper. Brush this mixture over the chicken breasts.
  4. Grill the chicken breasts for 6-8 minutes per side, or until cooked through and no pink remains in the centre. Let rest for a few minutes before slicing.
  5. Steam the broccoli florets and green beans for 3-5 minutes until tender-crisp. Drain well.
  6. In a bowl, toss the cooked new potatoes with the remaining 1 tbsp olive oil, remaining lemon juice, chopped parsley, salt, and pepper.
  7. Serve the grilled chicken slices alongside the dressed new potatoes and steamed greens.
