Grilled Chicken with New Potatoes and Greens

Ingredients
- Chicken breasts 2 x 175g
- New potatoes 500g
- Broccoli florets 150g
- Fine green beans, trimmed 150g
- Olive oil 2 tbsp
- Lemon 1/2, juiced
- Garlic clove, minced 1
- Fresh parsley, chopped 1 tbsp
- Salt to taste
- Black pepper to taste
Method
- Preheat your grill or a griddle pan to medium-high heat.
- Boil the new potatoes in lightly salted water for 15-20 minutes, or until tender. Drain and set aside.
- While potatoes boil, prepare the chicken. In a small bowl, mix 1 tbsp olive oil, half the lemon juice, minced garlic, salt, and pepper. Brush this mixture over the chicken breasts.
- Grill the chicken breasts for 6-8 minutes per side, or until cooked through and no pink remains in the centre. Let rest for a few minutes before slicing.
- Steam the broccoli florets and green beans for 3-5 minutes until tender-crisp. Drain well.
- In a bowl, toss the cooked new potatoes with the remaining 1 tbsp olive oil, remaining lemon juice, chopped parsley, salt, and pepper.
- Serve the grilled chicken slices alongside the dressed new potatoes and steamed greens.
