Grilled Paneer with Carrot

Ingredients
- Paneer 1 x 250g block
- Carrots 3 medium
- Soy sauce 2 tbsp
- Lime juice 1 tbsp
- Fresh ginger 1 tsp, grated
- Garlic 1 clove, minced
- Chilli flakes 1/2 tsp (or to taste)
- Vegetable oil 1 tbsp
- Sugar 1 tsp
- Fresh coriander small bunch, chopped (for garnish)
- Sesame seeds 1 tsp (optional, for garnish)
Method
- Cut the paneer block into thick slices or cubes.
- Peel the carrots and cut them into bite-sized pieces, or into long, thin batons.
- In a bowl, whisk together the soy sauce, lime juice, grated ginger, minced garlic, chilli flakes, vegetable oil, and sugar to make the marinade.
- Add the paneer and carrots to the marinade. Toss gently to coat everything evenly. Let it marinate for at least 15 minutes.
- Preheat your grill or a griddle pan over medium-high heat.
- Thread the marinated paneer and carrots onto skewers, or place them directly on the hot grill/pan.
- Grill for 5-7 minutes per side, or until the paneer is golden brown and slightly charred, and the carrots are tender-crisp.
- Serve hot, garnished with fresh chopped coriander and sesame seeds, if using.
