Method

  1. Cut the paneer block into thick slices or cubes.
  2. Peel the carrots and cut them into bite-sized pieces, or into long, thin batons.
  3. In a bowl, whisk together the soy sauce, lime juice, grated ginger, minced garlic, chilli flakes, vegetable oil, and sugar to make the marinade.
  4. Add the paneer and carrots to the marinade. Toss gently to coat everything evenly. Let it marinate for at least 15 minutes.
  5. Preheat your grill or a griddle pan over medium-high heat.
  6. Thread the marinated paneer and carrots onto skewers, or place them directly on the hot grill/pan.
  7. Grill for 5-7 minutes per side, or until the paneer is golden brown and slightly charred, and the carrots are tender-crisp.
  8. Serve hot, garnished with fresh chopped coriander and sesame seeds, if using.
