Method

  1. Preheat your grill or a griddle pan to medium-high heat. Lightly oil the grill grates or pan.
  2. Trim the root and dark green tops from the leeks. Wash them thoroughly under cold water to remove any grit, then slice into 1cm thick rounds.
  3. In a small bowl, combine the olive oil, lime juice, minced garlic, grated ginger, finely chopped chilli, dried thyme, smoked paprika, ground allspice, sea salt, and black pepper to create the marinade.
  4. Place the salmon fillets in a shallow dish. Pour the marinade over them, ensuring they are well coated. Let them marinate for at least 10-15 minutes at room temperature.
  5. While the salmon marinates, add the sliced leeks to a separate pan with a little extra oil if needed. Sauté over medium heat for 5-7 minutes until softened and slightly caramelised. Season with salt and pepper.
  6. Grill the salmon fillets for 3-5 minutes per side, depending on thickness, until cooked through and flaky. The skin should be crisp.
  7. Serve the grilled salmon fillets immediately alongside the sautéed leeks. Garnish with fresh chopped coriander.
