Halloumi Burgers with Chilli Jam

Ingredients
- Halloumi cheese 1 x 250g block
- Burger buns 4
- Little Gem lettuce 1
- Large ripe tomato 1
- Red onion 1/2
- Chilli jam 4 tbsp
- Rocket leaves a handful
- Olive oil 1 tbsp
Method
- Slice the halloumi block into 4 thick pieces. Slice the tomato and red onion thinly. Wash and tear the lettuce leaves and rocket.
- Heat the olive oil in a large non-stick frying pan or griddle pan over a medium-high heat.
- Add the halloumi slices to the hot pan and cook for 2-3 minutes per side, until golden brown and slightly softened.
- While the halloumi is cooking, lightly toast the cut sides of the burger buns under a grill or in a toaster until golden.
- Assemble the burgers: spread chilli jam on the bottom half of each bun, top with lettuce, tomato slices, red onion, the cooked halloumi, and rocket.
- Place the top bun on each burger and serve immediately.
