Method

  1. Slice the halloumi block into 4 thick pieces. Slice the tomato and red onion thinly. Wash and tear the lettuce leaves and rocket.
  2. Heat the olive oil in a large non-stick frying pan or griddle pan over a medium-high heat.
  3. Add the halloumi slices to the hot pan and cook for 2-3 minutes per side, until golden brown and slightly softened.
  4. While the halloumi is cooking, lightly toast the cut sides of the burger buns under a grill or in a toaster until golden.
  5. Assemble the burgers: spread chilli jam on the bottom half of each bun, top with lettuce, tomato slices, red onion, the cooked halloumi, and rocket.
  6. Place the top bun on each burger and serve immediately.
