Method

  1. Preheat your oven to 200°C (180°C fan/Gas Mark 6). Line a baking tray with parchment paper.
  2. Press the tofu block for at least 15 minutes to remove excess water. You can use a tofu press or wrap it in kitchen paper and place a heavy object on top.
  3. Cut the pressed tofu into 2cm cubes.
  4. In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, chopped fresh dill, chopped fresh parsley, salt, and black pepper.
  5. Add the tofu cubes to the marinade and gently toss to coat them evenly. Let it marinate for at least 10 minutes.
  6. Arrange the marinated tofu cubes in a single layer on the prepared baking tray.
  7. Bake for 20-25 minutes, or until the tofu is golden brown and slightly crispy, turning halfway through.
  8. While the tofu is baking, cook the frozen peas according to package instructions (usually by boiling or steaming for 3-5 minutes). Drain well.
  9. Serve the herbed tofu immediately alongside the cooked peas.
