Method

  1. Preheat your oven to 200°C (180°C fan/Gas Mark 6).
  2. Peel the carrots and cut them into roughly equal-sized chunks or batons.
  3. Peel and thinly slice or mince the garlic cloves.
  4. Place the carrots in a roasting tin. Add the sliced garlic, olive oil, thyme or rosemary sprigs (if using), salt, and pepper.
  5. Toss everything together to ensure the carrots are evenly coated.
  6. Roast in the preheated oven for 25-35 minutes, or until the carrots are tender and slightly caramelised, turning them halfway through.
