Roasted Carrot with Garlic

Ingredients
- Carrots 500g
- Garlic cloves 3
- Olive oil 3 tbsp
- Fresh thyme or rosemary sprigs (optional) 2
- Sea salt to taste
- Black pepper to taste
Method
- Preheat your oven to 200°C (180°C fan/Gas Mark 6).
- Peel the carrots and cut them into roughly equal-sized chunks or batons.
- Peel and thinly slice or mince the garlic cloves.
- Place the carrots in a roasting tin. Add the sliced garlic, olive oil, thyme or rosemary sprigs (if using), salt, and pepper.
- Toss everything together to ensure the carrots are evenly coated.
- Roast in the preheated oven for 25-35 minutes, or until the carrots are tender and slightly caramelised, turning them halfway through.
