Method

  1. Preheat your oven to 200°C (180°C fan/Gas Mark 6).
  2. Cut the halloumi into 2cm cubes. Break the broccoli into bite-sized florets. Peel and quarter the red onion, then cut into wedges. Deseed and chop the red bell pepper into bite-sized pieces. Finely chop the garlic.
  3. In a large roasting tin or on a baking tray, combine the halloumi, broccoli, red onion, and bell pepper. Add the chopped garlic.
  4. Drizzle with the olive oil. Sprinkle over the jerk seasoning, smoked paprika, and chilli flakes (if using). Toss everything together until well coated.
  5. Roast in the preheated oven for 20-25 minutes, or until the broccoli is tender-crisp and lightly charred, and the halloumi is golden brown.
  6. Squeeze the juice of half a lime over the roasted ingredients. Garnish with fresh coriander before serving.
