Roasted Halloumi with Broccoli

Ingredients
- Halloumi cheese 1 x 250g block
- Broccoli 1 large head (approx. 400g)
- Red onion 1 medium
- Red bell pepper 1 medium
- Garlic cloves 3
- Olive oil 3 tbsp
- Jerk seasoning 1.5 tsp
- Smoked paprika 1 tsp
- Chilli flakes (optional) 0.5 tsp
- Lime 1/2
- Fresh coriander, chopped (for garnish) small bunch
Method
- Preheat your oven to 200°C (180°C fan/Gas Mark 6).
- Cut the halloumi into 2cm cubes. Break the broccoli into bite-sized florets. Peel and quarter the red onion, then cut into wedges. Deseed and chop the red bell pepper into bite-sized pieces. Finely chop the garlic.
- In a large roasting tin or on a baking tray, combine the halloumi, broccoli, red onion, and bell pepper. Add the chopped garlic.
- Drizzle with the olive oil. Sprinkle over the jerk seasoning, smoked paprika, and chilli flakes (if using). Toss everything together until well coated.
- Roast in the preheated oven for 20-25 minutes, or until the broccoli is tender-crisp and lightly charred, and the halloumi is golden brown.
- Squeeze the juice of half a lime over the roasted ingredients. Garnish with fresh coriander before serving.
