Roasted Peas with Lemon
A simple yet flavourful side dish of garden peas roasted with garlic and fresh mint, finished with a bright lemon zest.

Ingredients
- Frozen peas 500g
- Olive oil 2 tbsp
- Garlic cloves 2
- Fresh mint 1 small bunch
- Lemon 1
- Sea salt to taste
- Black pepper to taste
Method
- Preheat your oven to 200°C (180°C fan/Gas Mark 6).
- Tip the frozen peas into a colander and rinse briefly under cold water to defrost slightly. Drain very well.
- Peel and finely chop or crush the garlic cloves. Finely chop the fresh mint leaves.
- Place the drained peas in a roasting tin. Drizzle with olive oil, add the chopped garlic, sea salt, and black pepper. Toss everything together to coat the peas evenly.
- Roast for 20-25 minutes, or until the peas are tender and slightly blistered in places.
- Remove the tin from the oven. Stir in the chopped fresh mint and the zest of the lemon. Squeeze over the juice from half the lemon (or to taste). Toss gently and serve immediately.
