Ingredients
- Fresh spinach 1 x 500g bag
- Garlic cloves 3
- Red chilli 1
- Olive oil 3 tbsp
- Salt to taste
- Black pepper to taste
Method
- Preheat your oven to 200°C (180°C fan/Gas Mark 6).
- Wash the spinach thoroughly and ensure it is well-drained. Pat dry with kitchen paper if necessary, as excess water can make it steam rather than roast.
- Peel and finely chop the garlic. Finely slice the red chilli (deseed it first if you prefer less heat).
- In a large bowl, toss the spinach with the olive oil, chopped garlic, sliced chilli, salt, and black pepper until evenly coated.
- Spread the seasoned spinach in a single layer on a baking tray.
- Roast for 15-20 minutes, or until the spinach is tender and slightly crisp around the edges.
