Method

  1. Preheat your oven to 200°C (180°C fan/Gas Mark 6).
  2. Wash the spinach thoroughly and ensure it is well-drained. Pat dry with kitchen paper if necessary, as excess water can make it steam rather than roast.
  3. Peel and finely chop the garlic. Finely slice the red chilli (deseed it first if you prefer less heat).
  4. In a large bowl, toss the spinach with the olive oil, chopped garlic, sliced chilli, salt, and black pepper until evenly coated.
  5. Spread the seasoned spinach in a single layer on a baking tray.
  6. Roast for 15-20 minutes, or until the spinach is tender and slightly crisp around the edges.
