Method

  1. Preheat your oven to 200°C (180°C fan/Gas Mark 6).
  2. Wash the spinach thoroughly and, crucially, dry it very well. Excess water will make it steam rather than roast.
  3. Spread the dried spinach in a single layer on a large baking tray.
  4. Drizzle with the vegetable oil, then scatter the minced garlic and grated ginger over the top. Season with salt and pepper.
  5. Toss everything together on the tray to coat the spinach evenly.
  6. Roast for 8-10 minutes, or until the spinach is wilted and tender, with slightly crispy edges.
  7. Remove from the oven, drizzle with the soy sauce and sesame oil, and toss gently to combine.
  8. Serve immediately as a quick and healthy side dish.
