Roasted Spinach with Garlic
A simple and flavourful side dish of spinach roasted with garlic and ginger, finished with soy and sesame oil for a Chinese-inspired twist.

Ingredients
- Fresh spinach 500g
- Garlic 4 cloves, minced
- Fresh ginger 1 thumb-sized piece, grated
- Vegetable oil 2 tbsp
- Soy sauce 1 tbsp
- Sesame oil 1 tsp
- Salt Pinch
- Black pepper Pinch
Method
- Preheat your oven to 200°C (180°C fan/Gas Mark 6).
- Wash the spinach thoroughly and, crucially, dry it very well. Excess water will make it steam rather than roast.
- Spread the dried spinach in a single layer on a large baking tray.
- Drizzle with the vegetable oil, then scatter the minced garlic and grated ginger over the top. Season with salt and pepper.
- Toss everything together on the tray to coat the spinach evenly.
- Roast for 8-10 minutes, or until the spinach is wilted and tender, with slightly crispy edges.
- Remove from the oven, drizzle with the soy sauce and sesame oil, and toss gently to combine.
- Serve immediately as a quick and healthy side dish.
