Ingredients
- Sweet potatoes 500g
- Olive oil 3 tbsp (45ml)
- Garlic cloves 2
- Dried chilli flakes 1 tsp
- Dried oregano 1 tsp
- Salt 1/2 tsp
- Black pepper 1/4 tsp
- Fresh parsley small bunch, chopped (for garnish)
- Lemon zest from 1/2 lemon (for garnish)
Method
- Preheat your oven to 200°C (180°C fan/Gas Mark 6). Line a large baking tray with baking parchment.
- Peel the sweet potatoes and cut them into roughly 2-3cm chunks. Place them in a large bowl.
- Add the olive oil, minced garlic, chilli flakes, dried oregano, salt, and black pepper to the bowl with the sweet potatoes. Toss well to ensure all the potato chunks are evenly coated.
- Spread the seasoned sweet potato chunks in a single layer on the prepared baking tray.
- Roast for 25-30 minutes, or until tender and slightly caramelised, turning halfway through the cooking time.
- Remove from the oven, sprinkle with fresh chopped parsley and lemon zest (if using), and serve hot.
