Simple Green Salad with Vinaigrette

Ingredients
- Mixed salad leaves 1 x 150g bag
- Cucumber 1/2
- Cherry tomatoes 1 x 250g punnet
- Red onion 1/4
- For the Vinaigrette
- Olive oil 3 tbsp
- White wine vinegar 1 tbsp
- Dijon mustard 1 tsp
- Sea salt pinch
- Freshly ground black pepper pinch
Method
- Wash and thoroughly dry the salad leaves. Place them in a large salad bowl.
- Slice the cucumber thinly. Halve the cherry tomatoes. Very thinly slice the red onion.
- Add the prepared cucumber, tomatoes, and red onion to the salad bowl.
- To make the vinaigrette, whisk together the olive oil, white wine vinegar, and Dijon mustard in a small bowl. Season with a pinch of sea salt and black pepper.
- Pour the vinaigrette over the salad ingredients just before serving.
- Toss gently to coat everything evenly. Serve immediately.
