Method

  1. Wash and thoroughly dry the salad leaves. Place them in a large salad bowl.
  2. Slice the cucumber thinly. Halve the cherry tomatoes. Very thinly slice the red onion.
  3. Add the prepared cucumber, tomatoes, and red onion to the salad bowl.
  4. To make the vinaigrette, whisk together the olive oil, white wine vinegar, and Dijon mustard in a small bowl. Season with a pinch of sea salt and black pepper.
  5. Pour the vinaigrette over the salad ingredients just before serving.
  6. Toss gently to coat everything evenly. Serve immediately.
