Smoked Salmon and Chive Omelette

Ingredients
- Large eggs 3
- Smoked salmon, flaked or diced 50g
- Fresh chives, finely chopped 15g (1 small bunch)
- Milk 15ml
- Butter or vegetable oil 5g (1 tsp)
- Salt pinch
- Black pepper pinch
- Optional: Grated mature cheddar cheese 25g
Method
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Add most of the chopped chives to the egg mixture, reserving a little for garnish.
- Heat the butter or oil in a non-stick frying pan over a medium heat.
- Pour the egg mixture into the hot pan. Let it cook undisturbed until the edges start to set, about 1-2 minutes.
- Gently push the cooked edges towards the centre, tilting the pan to allow the uncooked egg to flow underneath. Repeat until the omelette is mostly set but still slightly moist on top.
- Scatter the flaked smoked salmon and grated cheese (if using) over one half of the omelette.
- Carefully fold the other half of the omelette over the filling using a spatula.
- Cook for another 1-2 minutes, or until the salmon is warmed through and the cheese is melted.
- Slide the omelette onto a plate, garnish with the remaining chives, and serve immediately.
