Spicy Halloumi with Courgette

Ingredients
- Halloumi cheese 1 x 250g block
- Courgettes 2 medium
- Red onion 1 medium
- Red bell pepper 1
- Yellow bell pepper 1
- Garlic cloves 3
- Olive oil 3 tbsp
- Smoked paprika 1 tsp
- Chilli flakes 1 tsp (or to taste)
- Ground cumin 1/2 tsp
- Lime 1
- Fresh coriander small bunch, roughly chopped
- Salt pinch
- Black pepper pinch
Method
- Slice the halloumi into 1cm thick pieces. Chop the courgettes into bite-sized chunks, slice the red onion into wedges, and deseed and chop the bell peppers into similar-sized pieces as the courgettes. Mince the garlic.
- In a large bowl, combine the chopped courgettes, red onion, and bell peppers. Add 2 tbsp of the olive oil, smoked paprika, chilli flakes, ground cumin, salt, and black pepper. Toss well to coat.
- Heat the remaining 1 tbsp of olive oil in a large frying pan or skillet over a medium-high heat. Add the seasoned vegetables and cook for 8-10 minutes, stirring occasionally, until tender-crisp and slightly charred.
- While the vegetables are cooking, pat the halloumi slices dry with kitchen paper. You can either add them to the pan with the vegetables for the last 3-4 minutes of cooking, or fry them separately in a clean, hot pan until golden brown and crispy on both sides.
- Once the vegetables are cooked, stir in the minced garlic and cook for another minute until fragrant. Squeeze the juice of half the lime over the vegetables.
- Add the pan-fried halloumi to the pan with the vegetables (if fried separately) and toss gently. Taste and adjust seasoning if needed. Serve immediately, garnished with fresh coriander and the remaining lime wedges.
