Spicy Pork with Sweet Potato

Ingredients
- Boneless pork loin or shoulder, cut into 3cm chunks 500g
- Large sweet potatoes, peeled and cut into 3cm chunks 2
- Large red onion, cut into wedges 1
- Garlic cloves, finely chopped 4
- Fresh ginger, grated 2cm piece
- Soy sauce 3 tbsp
- Fish sauce 2 tbsp
- Chilli flakes 1 tsp
- Lime juice 1 tbsp
- Honey 1 tbsp
- Vegetable oil 2 tbsp
- Fresh coriander, roughly chopped (for garnish) small bunch
Method
- Preheat your oven to 200°C (180°C Fan / Gas Mark 6).
- In a large bowl, whisk together the soy sauce, fish sauce, chilli flakes, lime juice, honey, chopped garlic, grated ginger, and vegetable oil to make the marinade.
- Add the pork chunks, sweet potato chunks, and red onion wedges to the bowl. Toss everything thoroughly to ensure it's evenly coated in the marinade.
- Spread the marinated pork and vegetables in a single layer on a large baking tray.
- Roast for 35-45 minutes, or until the pork is cooked through and tender, and the sweet potatoes are soft and slightly caramelised. Turn the pieces halfway through cooking for even browning.
- Remove from the oven, garnish generously with fresh coriander, and serve hot.
