Method

  1. Preheat your oven to 200°C (180°C Fan / Gas Mark 6).
  2. In a large bowl, whisk together the soy sauce, fish sauce, chilli flakes, lime juice, honey, chopped garlic, grated ginger, and vegetable oil to make the marinade.
  3. Add the pork chunks, sweet potato chunks, and red onion wedges to the bowl. Toss everything thoroughly to ensure it's evenly coated in the marinade.
  4. Spread the marinated pork and vegetables in a single layer on a large baking tray.
  5. Roast for 35-45 minutes, or until the pork is cooked through and tender, and the sweet potatoes are soft and slightly caramelised. Turn the pieces halfway through cooking for even browning.
  6. Remove from the oven, garnish generously with fresh coriander, and serve hot.
