Sticky Beef with Tomato

Ingredients
- Beef steak (e.g., sirloin, rump), thinly sliced 500g
- Fresh ginger, grated 1 tbsp
- Garlic cloves, minced 2
- Chilli flakes 1 tsp
- Soy sauce 100ml
- Honey 50ml
- Vegetable oil 1 tbsp
- Medium onion, thinly sliced 1
- Chopped tomatoes 1 x 400g can
- Spring onions, sliced, to garnish 2
- Sesame seeds, toasted, to garnish (optional) 1 tsp
- Cooked rice or noodles, to serve
Method
- In a bowl, mix together the grated ginger, minced garlic, chilli flakes, soy sauce, and honey. Add the sliced beef, toss to coat, and let it marinate for at least 10 minutes.
- Heat the vegetable oil in a large frying pan or wok over a medium-high heat. Add the sliced onion and cook for 3-4 minutes until softened.
- Add the marinated beef to the pan, along with any excess marinade. Cook for 2-3 minutes, stirring, until the beef is browned.
- Pour in the chopped tomatoes and stir everything together.
- Bring the mixture to a simmer, then reduce the heat and cook for 5-7 minutes, or until the sauce has thickened slightly and the beef is cooked through.
- Season to taste if needed, then serve immediately over cooked rice or noodles.
- Garnish with sliced spring onions and toasted sesame seeds, if using.
