Ingredients
- For the Filling
- mixed berries (fresh or frozen) 500g
- caster sugar 75g
- cornflour 1 tbsp
- lemon juice 1 tbsp
- For the Cobbler Topping
- self-raising flour 200g
- cold unsalted butter, cubed 50g
- caster sugar 30g
- large egg, beaten 1
- milk 50ml
Method
- Preheat your oven to 200°C (180°C fan/Gas Mark 6).
- For the filling: In a large ovenproof dish (approx. 20cm x 20cm), mix the berries, 75g caster sugar, cornflour, and lemon juice. Stir gently to combine.
- For the topping: Rub the cold butter into the 200g self-raising flour using your fingertips until the mixture resembles breadcrumbs. Stir in the 30g caster sugar.
- Make a well in the centre and add the beaten egg and milk. Mix briefly with a knife until just combined into a soft, slightly sticky dough. Do not overmix.
- Drop spoonfuls of the cobbler topping evenly over the berry mixture, leaving small gaps for steam to escape.
- Bake for 30-35 minutes, or until the topping is golden brown and the berry filling is bubbling.
