  1. Preheat your oven to 200°C (180°C fan/Gas Mark 6).
  2. In a large baking dish or roasting tin, combine the beef chunks, sliced courgettes, red onion wedges, and minced garlic.
  3. Pour over the chopped tomatoes, olive oil, dried oregano, dried thyme, and lemon juice.
  4. Season generously with salt and black pepper.
  5. Stir everything together thoroughly to ensure the beef and vegetables are evenly coated with the liquids and seasonings.
  6. Cover the dish tightly with foil.
  7. Bake for 1 hour and 30 minutes, or until the beef is tender.
  8. Remove the foil for the last 15-20 minutes of cooking if you want to reduce the liquid slightly.
