Ingredients
- Stewing beef, cut into 3cm chunks 500g
- Medium courgettes, sliced 2
- Large red onion, cut into wedges 1
- Garlic cloves, minced 3
- Chopped tomatoes 1 x 400g can
- Olive oil 3 tbsp
- Dried oregano 1 tsp
- Dried thyme 1 tsp
- Lemon juice 2 tbsp
- Salt to taste
- Black pepper to taste
Method
- Preheat your oven to 200°C (180°C fan/Gas Mark 6).
- In a large baking dish or roasting tin, combine the beef chunks, sliced courgettes, red onion wedges, and minced garlic.
- Pour over the chopped tomatoes, olive oil, dried oregano, dried thyme, and lemon juice.
- Season generously with salt and black pepper.
- Stir everything together thoroughly to ensure the beef and vegetables are evenly coated with the liquids and seasonings.
- Cover the dish tightly with foil.
- Bake for 1 hour and 30 minutes, or until the beef is tender.
- Remove the foil for the last 15-20 minutes of cooking if you want to reduce the liquid slightly.
