Ingredients
- For the filling
- Frozen mixed berries 1 x 400g bag
- Caster sugar 50g
- Cornflour 1 tbsp
- Lemon zest 1 tsp
- Ground cinnamon 1/2 tsp
- For the crumble topping
- Plain flour 200g
- Cold unsalted butter, cubed 100g
- Caster sugar 75g
- Porridge oats 50g
- Chopped almonds (optional, for texture) 25g
Method
- Preheat your oven to 190°C (170°C fan/Gas Mark 5).
- In a large bowl, combine the frozen berries, 50g caster sugar, cornflour, lemon zest, and cinnamon. Stir gently to coat the berries, then tip the mixture into a medium-sized ovenproof dish (approx. 20x20cm).
- In a separate bowl, add the plain flour and cubed butter. Rub the butter into the flour using your fingertips until the mixture resembles coarse breadcrumbs.
- Stir in the 75g caster sugar and porridge oats (and chopped almonds, if using) into the breadcrumb mixture.
- Evenly scatter the crumble topping over the berry mixture in the dish.
- Place the dish on a baking tray (to catch any potential drips) and bake for 30-35 minutes, or until the topping is golden brown and the berry filling is bubbling.
- Allow to cool slightly before serving. Delicious served warm with custard, cream, or ice cream.
